I haven't made a clafoutis in ages, but upon raiding the fridge decided it was the perfect way to use a number of old and wrinkled nectarines.
The recipe is very basic.
Dice about 450g of soft fruit into 1cm cube pieces. You don't need to pre cook or pre sweeten it as it should be soft and sweet enough on its own.
If you are using a hard fruit like pears and apples, you may want to dice it and then cook it slightly but as the dish spends 45 min in the oven, again I don't think its necessary.
Lay the fruit in the bottom of a buttered pie dish or shallow casserole dish.
In a separate bowl, mix together 3 tbsp plain flour, 3 tbsp sugar (this can be reduced),
Add a dash of vanilla essence, 1 tsp of nutmeg, 2 eggs and 3/4 cup of milk.
Whisk it together until it is well combined and smooth in consistency.
Pour the mixture over the diced fruit and bake in a 190°C oven for 45 minutes.
Eat with yoghurt or icecream, hot or cold.
